The subject of cookie recipes came up in a forum I visit today. I love me some cookies! So I thought I would share one of my favorite recipes with everyone. This one’s a little different, but it’s really awesome! Here you go:
Russian Tea Cakes
- 1 cup butter or margarine, softened
- 1/2 cup powdered sugar
- 1/2 tsp. vanilla
- 1/2 tsp. almond extract
- 2 1/4 cups all purpose flour
- 1/4 tsp. salt
- 3/4 cup finely chopped pecans
- more powdered sugar (to roll the cookies in)
Heat oven to 400 degrees. In large mixing bowl, combine butter, 1/2 cup sugar, and vanilla and almond extracts. Beat at medium speed of electric mixer until light and fluffy. Add flour and salt. Beat at low speed until soft dough forms. Stir in pecans.
Shape dough into 1-inch balls. Place balls 2 inches apart on ungreased cookie sheets. Bake for 10-12 minutes or until set. Immediately roll cookies in powdered sugar. Cool completely. Reroll cookies in powdered sugar before storing.

My mouth is watering! These are my absolutely favorite cookies in the world. Unfortunately I only make them at Christmas time. I should start making them all year long!

Yeah, I mainly make them around Christmas too since nobody else in my household likes anything with pecans in it. I keep some for myself and give the rest to my mom, brother and sister. But I’m thinking about making up a batch pretty soon just for the heck of it. Surely I can find someone to help me eat them!
